  • 120 g wholegrain rice
  • 300 ml water
  • 2 tsp salt

For the curry:

  • 1 tbsp coconut oil
  • 2 spring onions, chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp freshly grated ginger
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 300 g broccoli florets
  • 200 g carrots, cut into pieces
  • 400 ml coconut milk
  • 200 ml water
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 200 g spinach leaves, chopped
  • 20 g coriander or parsley leaves, chopped

Preparation

  1. Prepare the riceSoak the whole grain rice for 20 minutes.
  2. Prepare vegetablesWash the vegetables and cut into bite-sized pieces, peel and finely grate the ginger.
  3. Cook the curryIn a pan, fry the onion and garlic in coconut oil until translucent. Add the carrots and broccoli and fry briefly. Add the cumin and curry powder, fry briefly and deglaze with coconut milk and water. Simmer for 10-12 minutes.
  4. FinalizeAdd the spinach and herbs to the curry and season with lemon juice.
