Ingredients (2 portions):

160g LiveFresh Low carb high protein fusilli 

2 cups carrot greens 

50g grated Parmesan cheese 

100ml LiveFresh vegetable stock

1/2 lemon

1 handful feta cheese 

20g pine nuts 

5 tbsp olive oil

Preparation:

  1. The Low carb high protein pasta cook al dente in lightly salted water according to the instructions on the packet. Drain and set aside, reserving half a cup of the pasta water.
  2. Lightly toast the pine nuts in a pan without oil over a medium heat until golden brown. 
  3. Place the carrot greens, grated Parmesan, vegetable stock, feta cheese, juice of half a lemon and half the toasted pine nuts in a blender.
  4. Slowly add the olive oil and blend everything into a smooth pesto sauce. If the pesto is too thick for you, you can add a little pasta water as required to achieve the desired consistency.
  5. Season the pesto with salt and pepper to taste.
  6. Add the cooked fusilli to the pan and pour over the carrot green pesto. Mix everything well until the pasta is evenly coated with the pesto.
  7. Arrange the pasta on two plates and top with feta cheese and a little freshly squeezed lemon juice. 
  8. Enjoy the taste!
