Ingredients (2 portions):
160g LiveFresh Low carb high protein fusilli
2 cups carrot greens
50g grated Parmesan cheese
100ml LiveFresh vegetable stock
1/2 lemon
1 handful feta cheese
20g pine nuts
5 tbsp olive oil
Preparation:
- The Low carb high protein pasta cook al dente in lightly salted water according to the instructions on the packet. Drain and set aside, reserving half a cup of the pasta water.
- Lightly toast the pine nuts in a pan without oil over a medium heat until golden brown.
- Place the carrot greens, grated Parmesan, vegetable stock, feta cheese, juice of half a lemon and half the toasted pine nuts in a blender.
- Slowly add the olive oil and blend everything into a smooth pesto sauce. If the pesto is too thick for you, you can add a little pasta water as required to achieve the desired consistency.
- Season the pesto with salt and pepper to taste.
- Add the cooked fusilli to the pan and pour over the carrot green pesto. Mix everything well until the pasta is evenly coated with the pesto.
- Arrange the pasta on two plates and top with feta cheese and a little freshly squeezed lemon juice.
