Ingredients (2 portions):

For the vegetable pasta

160g LiveFresh Low carb high protein fusilli 

200g broccoli

175g carrot 

100g leek 

Olive oil

For the sauce 

2 tbsp semi-skimmed margarine

1 tbsp spelt flour 

125 ml low-fat milk 

100 ml LiveFresh vegetable stock 

1-2 tbsp finely chopped parsley 

salt 

pepper  

For the tofu 

Tofu 

Buttermilk

Panko breadcrumbs 

paprika powder 

salt 

Pepper 

Preparation:

  1. The High Protein Noodles cook according to the packet instructions.
  2. Wash the broccoli, carrots and leek, cut the broccoli into small florets and the carrots and leek into thin slices. 
  3. Then place the broccoli and carrots in a pan and cook until done. Sauté the leek with a little olive oil for 5 minutes in a hot pan and then set aside.
  4. Now pat the tofu dry, add the spices to the buttermilk, dip the tofu in it and then turn it through the breadcrumb mixture, place in a hot pan and fry on both sides until golden brown.
  5. Meanwhile, for the sauce, place the margarine in a pan and melt. Add the flour and bring to the boil, stirring constantly, until the mixture takes on a light color. Then deglaze with milk and vegetable stock, add the spices and finely chopped parsley and simmer for 10 minutes. 
  6. Finally, mix the fusilli with the vegetables, arrange on a plate, pour over the sauce and top with the breaded tofu. 
  7. Enjoy your meal!
