    Peel and roughly grate the potatoes. It is best to grate directly into a clean kitchen towel or sieve so that the moisture is absorbed straight away.

    Squeeze the grated potatoes vigorously until as much liquid as possible has been removed. This is the most important step to ensure that the pancakes hold together even without a binding agent.

    Depending on your taste and the topping to be used later, add a little salt to the potato mixture or leave it plain.

    Heat a non-stick frying pan with a little oil. Place small mounds of the potato mixture in the pan and press flat.

    Fry over a medium heat until golden brown and crispy on both sides, about 4-5 minutes per side.
