Fresh summer salad with roasted chickpeas

This delicious and fresh summer salad with a tasty topping of pomegranate seeds and roasted chickpeas will add a great change to your everyday diet. This salad is also perfect as a snack during your pre- and post-meal preparation for your juice cleanse. Ingredients (4 portions):

400g salad of your choice 

2 carrots

1/2 cucumber

1 bell bell pepper

200g cherry tomatoes

pomegranate seeds 

60g sprouts 

400g chickpeas

olive oil

dressing:

4 tablespoons tahini (sesame paste)

4 tbsp soy sauce

4 tbsp water

1 garlic clove 

1 lime 

Preparation:

  1. Grate the cucumber into slices and the carrots into fine strips
  2. Cut the peppers into small cubes, halve the tomatoes and place them in a bowl with the cucumber and carrots
  3. Heat a little olive oil in a pan and add the chickpeas
  4. Season them with the spices of your choice and roast them in the pan until they are crispy
  5. Chop the garlic as finely as possible and put it in a small bowl
  6. Add the soy sauce, tahini and water and mix carefully with the garlic to make a sauce. Season to taste with the juice of a fresh lime
  7. Add the washed salad to the vegetables in the bowl and add the pomegranate seeds and sprouts
  8. Mix the salad carefully and put it in a deep plate or salad bowl
  9. Pour the dressing over the salad and mix it with the salad
  10. Top with the roasted chickpeas
