Vegan falafel made of sweet potato and corn

These delicious falafel made of sweet potato and corn are super tasty and a great change on your menu. Ingredients (20 falafeln):

1 medium -sized sweet potato

2 TL vegetable oil

1 large onion

2 cloves of garlic

40g chickpea flour

800g chickpeas (2 cans)

1 teaspoon ground cumin

1 TL paprika powder

1 teaspoon salt

½ tl black pepper

Pinch

1-2 el Ajvar

½ 275g can corn

½ BUND parsley

    Preparation:

    1. Stick the sweet potatoes with a fork a few times. Then put them in the microwave and cook it there for 10 minutes on a high level
    2. Dice the onion and the garlic. Put some oil in a pan and heat it. Then add the onion and the garlic and steam it until glassy for 2-3 minutes
    3. Put the chickpea flour together with the chickpeas from the can, the fried onions and the garlic, the cumin, the paprika powder, salt and pepper and a pinch of chilli in a blender and process everything into a rough mix
    4. Put everything in a bowl
    5. Charge the soft sweet potato with a spoon from the inside. Add the mass together with Ajvar, corn and parsley in the bowl to the chickpea flour mixture
    6. Mix everything carefully and taste off as desired
    7. Place the bowl in the fridge for 30 minutes
    8. Form with damp hands flat balls and distribute them to a baking sheet lined with baking paper as soon as the mixture is solid
    9. Put enough oil in a large pan and heat it
    10. Now put the falafel in the hot oil and press it a little flat with a spatula
    11. Fry for about 4 minutes until they are golden brown. Then turn and fry the other side
    12. Serve with dip and enjoy!
