Summer rolls

Summer rolls are the perfect snack for warm days - light, refreshing and full of flavor! In this version, the rolls are filled with crunchy vegetables, creamy avocado and the delicious LiveFresh Ras El Hanout Bowl filled.

Ingredients (2 portions):

Rice paper

carrot

avocado

Lettuce (e.g. iceberg lettuce or romaine lettuce)

LiveFresh vegan bowl - ras el hanout 

Preparation:

  1. Peel the carrot and cut it into thin strips. Halve the avocado, remove the stone and cut into thin slices. Wash the lettuce and tear into bite-sized pieces

  2. Now soak the rice paper in lukewarm water until it becomes soft and pliable

  3. The rice paper can then be covered with the lettuce leaves, followed by carrot strips, avocado slices and a portion of the bowl 

  4. Now fold the rice paper in at the sides and roll up tightly from bottom to top

  5. You can now repeat the process with the remaining ingredients

  6. Now arrange the summer rolls on a serving platter and serve with optional dipping sauce such as peanut, soy or sweet chili sauce

  7. Enjoy your meal!
