Ingredients (4 portions):
1kg salad potatoes
1 large onion
2 tbsp vinegar
4 TBSP OIL
1 cup vegetable stock
salt
pepper
Fresh parsley
Vegetarian sausages
Preparation:
- First wash the potatoes and boil them in salted water for about 15 minutes
- Now peel the potatoes and cut into thin slices
- Then peel the onion and cut into small cubes
- Meanwhile, heat the vegetable stock in a pan and set aside
- Now add the onion, salt, pepper, vinegar, oil, mustard and vegetable stock to the potatoes and stir in well
- Leave the potato salad to stand for approx. 1 hour
- Then carefully heat the vegetarian sausages in a pan
- Finally, serve the potato salad, vegetarian sausages and a dollop of mustard on a plate and enjoy.
