Vegan Smasehd Potatoes

Vegan smashed potatoes or in German mashed or mashed potatoesare very easy to prepare and yet something very special. Perhaps because they are not yet very well known in this country, or perhaps just because of that certain extra something. butter, parsley and garlic? The unconventional shape is of course also convincing. What's more, this recipe fits perfectly into your juice cleanse preparation and follow-up as well as into a healthy everyday diet.

Ingredients (4 portions):

1.5 kg potatoes (waxy) 

40g butter

1 avocado

4 tbsp olive oil

Handful of pecans

1 lemon

LiveFresh orange juice

Fresh parsley

1 teaspoon sea salt

1 teaspoon pepper

1 teaspoon sweet paprika

½ onion powder

Preparation:

    1. Wash the potatoes, place in a pot of cold water and cook for about 15 minutes, then leave to cool

    2. Now prepare a baking tray with baking paper, spread the cooled potatoes on it and flatten with a glass, potato masher or similar.

    3. Melt the butter, add the olive oil and garlic, leave to infuse for approx. 10 mins. and then add the fresh parsley

    4. Brush the melted butter and oil mixture onto the potatoes and place the tray in the oven for 20 minutes at 225°C top and bottom heat

    5. Finally, finely chop the avocado, puree in a blender together with the pecans and orange juice and pour into a small bowl

    6. Serve the smashed potatoes with the dip on a plate, that's it!
