Ingredients (2 portions):
1 onion
1 garlic clove
1 lemon (organic)
100ml dry white wine
Approx. 500ml vegetable stock
Approx. 170g risotto rice
2 tbsp vegan butter
40g vegan parmesan

Preparation:
- First chop the onion and garlic
- Now fry the rice, onion, garlic and butter briefly in a pan over a high heat
- Then deglaze with white wine and the vegetable stock and reduce the heat
- Then add the lemon zest, juice and zest to the risotto and allow everything to simmer gently
- Stir constantly so that the risotto does not burn
- As soon as the liquid has reduced, stir in the Parmesan and dill until everything is nice and creamy
