Vegane One Pot Protein Pasta

Our One Pot Protein Pasta is a must for all pasta lovers! The pasta is prepared in just one pot, that's all you need! Unless, like us, you want crispy tofu instead of cooking it in the pasta. You only need a few ingredients for the dish, it's ready in 15-20 minutes and tastes super delicious! Also great - the recipe is perfect for incorporating into the preparation and follow-up of a juice cleanse to integrate it into the preparation and follow-up. Ingredients (2 portions):

100g red lentil pasta

100g mushrooms

1 carrot

½ onion

½ clove of garlic

½ zucchini

50g baby spinach

250g smoked tofu

1 tbsp tomato purée

½ tsp salt

½ tsp pepper

½ tsp oregano

½ tsp chili powder

350ml vegetable stock

125ml vegan non-alcoholic white wine

1 handful of cherry tomatoes

Preparation:

  1. First cut the onions and garlic and place in a saucepan with a little olive oil and sauté
  2. In the meantime, cut the carrots, zucchini and mushrooms and add them to the pot as well
  3. Add the tomato puree and spices and fry briefly
  4. Then add the vegetable stock and vegan non-alcoholic white wine to the pasta and make sure that everything is well covered with liquid
  5. Bring the contents of the pan to the boil and then simmer over a low heat until the pasta is cooked through
  6. Stir occasionally and finally fold in the spinach
  7. Now dice the tofu and fry in a pan with a little olive oil on all sides until golden brown
  8. Finally, serve the pasta and top with the tofu
