Vegan pea crest crostini

Ingredients (2 portions):

1 whole grain baguette

2 stems mint

Fresh cress

1/2 onion

1 clove of garlic

4 tablespoons of olive oil

120g peas

½ lemon

Pecans

Salt pepper

Preparation:

Wash the cress and mint and cut the onion and the garlic into small cubes. Heat the olive oil in a pan and steam the onion and the garlic in it. Add the peas and the pecans. Press the lemon over the pan. Steam everything together for 3-4 minutes. Then put all the ingredients (including the mint and cress) in a bowl and puree them using a hand blender until you get a creamy mass. Then taste with pepper and salt. Cut the baguette into slices and spread it with olive oil. Then roast it in the pan until golden brown. Chop the pecans. Now spread the bread slices with the peas and top them with cress and pecanes. Arrange, serve and enjoy!
