Asparagus salad with strawberries and caramelized walnuts

Ingredients (4 portions):
2 BUND green asparagus
400g strawberries
125g lamb's lettuce
100g blueberries
20g mint
200g vegan feta
4 tablespoons of olive oil
Salt pepper
4 tablespoons of walnuts
1 tablespoon of date syrup
3 tablespoons of balsamic vinegar
1 teaspoon honey
1 TL mustard
Erythrite
Preparation:
- Wash the asparagus, peel the lower third and break the woody ends
- Third the asparagus rods with a slightly sloping cut
- Wash the strawberries, remove the stalk and quarter them
- Wash both the arugula and the blueberries
- Clean the mint under running water, pluck the leaves from the stems and chop them roughly
- Crumble the feta in your hands
- Heat about 1 tablespoon of olive oil in a pan and fry in it the asparagus rods
- Wort with salt and pepper
- Roast the walnuts in a further pan initially to be fat -free for 2 minutes
- Sprinkle with erythritus and caramelize them for about 3 minutes
- Put the nuts on a baking paper and chop them into rough pieces after cooling
- Mix in a bowl 2 tablespoons of olive oil, balsamic vinegar, honey and mustard
- Wort with pepper & salt
- Mix the asparagus, the strawberries, the lamb's lettuce as well as the blueberries, the mint and the feta with the dressing
- Top the salad with the caramelized walnuts
