Ingredients (4 portions):
For the dumplings
6 stale bread rolls
1 tbsp clarified butter
½ tsp salt
For the sauce
500g Vers. mushrooms
Vegan chicken breast strips
½ red onion
1 TBSP. LiveFresh vegetable stock
1 tbsp tomato puree
For the red cabbage
1 jar of ready-made red cabbage
1 teaspoon clarified butter
First cut the bread rolls for the dumplings into small pieces and place in a bowl
Then finely chop the onion and parsley and sauté in a pan over a medium heat with clarified butter
Now heat the milk, but do not bring to the boil, add to the bread rolls together with the parsley and onions, mix well and set aside for 10 minutes
Then place the red cabbage in a pan with the chopped apple and clarified butter, bring to the boil briefly and then turn the heat down to medium.
Now clean and chop the mushrooms and place in a hot pan, sauté briefly, add the onions and continue to sauté, stir in the vegetable stock and tomato puree, pour in the cream, add the vegan chicken breast strips and fresh parsley and continue to simmer over a low heat
Bring a sufficiently large pan of water to the boil
Meanwhile, add the eggs and spices to the breadcrumb mixture, mix well and shape into evenly sized balls
As soon as the water boils, add the dumplings, switch to medium heat and leave to stand for 20 minutes (the water must no longer boil)
Finally, serve on a plate and enjoy!
