Ingredients (2 portions):

30g Parmesan cheese

250g quark

50g guar gum

2 eggs (size M)

1 pinch of turmeric

1 tsp salt


  1. First finely grate the parmesan and knead together with the quark, guar gum, eggs, salt and turmeric, first with the dough hook of the hand mixer, then with your hands to form a smooth and supple dough

  2. Now shape the dough into a ball, wrap in cling film and leave to rest for approx. 15 mins.

  3. Then divide the dough into quarters and roll out thinly on the work surface with a little flour

  4. Then bring salted water to the boil and remove from the hob

  5. Finally, cut the dough sheets into approx. 1 cm narrow strips with a kitchen knife, carefully place in the boiling water and leave to stand for 1 minute until they rise to the top

  6. Arrange the low carb pasta on a plate and serve with a sauce of your choice

  7. Enjoy!
