Ingredients (4 portions)

For the curry

  • 1 tofu
  • 1 large cauliflower
  • 1 red onion
  • 2 carrots
  • 1 red bell bell pepper
  • 1 green bell pepper
  • 1 head of broccoli (florets)
  • 1 tbsp ginger
  • 3 tbsp red curry paste
  • 3 tbsp soy sauce
  • 2 tsp paprika powder
  • 2 tsp rice vinegar
  • 1 tin of coconut milk
  • 140 ml vegetable stock
  • 1 cup peas
  • salt
  • pepper

For the topping

  • 1-2 tbsp sesame oil
  • 250 g firm tofu
  • 1 tsp turmeric
  • Salted peanuts
  • Soy yogurt
  • Sesame seeds
  • Fresh leaf parsley

Preparation

  1. PreparationWash and cut the vegetables into bite-sized pieces, wash the cauliflower and set aside.
  2. Sauté: Place the onions in a large deep pan, fry briefly until translucent, add the carrots and broccoli florets and fry for approx. 3-5 minutes.
  3. Marinate the tofuCut the tofu into cubes and marinate with sesame oil and turmeric.
  4. Prepare the curry sauceAdd the ginger, garlic, peas and peppers to the pan, fry briefly, add the curry paste and deglaze with the coconut milk and vegetable stock. Stir in the curry paste well and simmer for 8-10 minutes.
  5. Cauliflower riceGrate the cauliflower into rice-sized pieces and fry in a large pan with a little olive oil until golden brown. Fry the tofu in a pan until golden brown.
  6. ServeServe the curry together with the cauliflower rice on a plate and top with the tofu, soy yogurt, sesame seeds and salted peanuts. Sprinkle with fresh parsley leaves.
