Vegan Buddha Bowl with Tafini dressing
This simple Mediterranean Buddha Bowl is full of colorful vegetables, fresh salad, healthy quinoa, protein-rich chickpeas and a creamy tahini dressing. A great nutrient -rich Rainbow veggie bowl with fresh ingredients for the perfect preparation for yours Juice cure.
Ingredients (2 portions):
150g quinoa
100g chickpeas
250g broccoli
200g carrot
1 handful of mung beans
200g tofu smoking (optional)
200g of green beans
½ avocado
1 pair of fresh roasted tomatoes
½ sweet potato
For the dressing:
¼ cup of sesame paste
2 tablespoons of lime juice
1 tablespoon of sesame oil
½ TL sea salt
1 tablespoon of date syrup
Some water
Preparation:
- First prepare the quinoa according to the package instructions
- Wash and cut zucchini, carrot and the beans
- Cook the vegetables in the water vapor now until it has the desired bite resistance
- Cut the sweet potatoes into fine slices, spread them on a plate and put them in a microwave for about 2-3 minutes. Then turn the sweet potato slices and put them in the microwave for 2-3 minutes
- In the meantime, mix all the ingredients for dressing and stir well
- Now fill the bowl bowl with the quinoa
- Top with the vegetables and the other ingredients
- Finally, put the Tahini dressing over it and garnish with some fresh chilli
- Enjoy your meal!
