Vegan Buddha Bowl with Tafini dressing

Ingredients (2 portions):

150g quinoa

100g chickpeas

250g broccoli

200g carrot

1 handful of mung beans  

200g tofu smoking (optional)

200g of green beans

½ avocado

1 pair of fresh roasted tomatoes

½ sweet potato

For the dressing:

¼ cup of sesame paste

2 tablespoons of lime juice

1 tablespoon of sesame oil

½ TL sea salt

1 tablespoon of date syrup

Some water

Preparation:

  1. First prepare the quinoa according to the package instructions
  2. Wash and cut zucchini, carrot and the beans
  3. Cook the vegetables in the water vapor now until it has the desired bite resistance
  4. Cut the sweet potatoes into fine slices, spread them on a plate and put them in a microwave for about 2-3 minutes. Then turn the sweet potato slices and put them in the microwave for 2-3 minutes
  5. In the meantime, mix all the ingredients for dressing and stir well
  6. Now fill the bowl bowl with the quinoa
