This wonderful, pure raw vegetable salad impresses with fresh red cabbage, oranges and much more. A color and flavor rush of a special kind. This delicious salad is quickly prepared and attracts all eyes.

Ingredients (2 people):
2 spring onions
1/3 red cabbage
1 large sweet potato
1 can chickpeas
6 tablespoons olive oil
Juice of 1/2 lemon
1 tsp mustard
1 tsp honeySalt and pepper to taste
First peel the sweet potato, cut it into small pieces and marinate it together with the chickpeas in olive oil, salt and curry.
Now put the mixture in the oven at approx. 220 °C for 25-30 min.
Then peel the red cabbage on the inside with a peeler and chop the orange and the spring onions.
Now chop the halloumi and fry it in a pan with olive oil
Mix the ingredients for the dressing and mix everything together in a large bowl
Now arrange the salad and enjoy
