Orange red cabbage salad

This wonderful, pure plant-based raw food salad impresses with fresh red cabbage, oranges and much more. A special kind of riot of color and flavor. This delicious salad is quick to prepare and attracts everyone's attention.

Ingredients (serves 2):

1 orange

2 spring onions

1/3 red cabbage

1 halloumi

1 large sweet potato

1 tin of chickpeas

olive oil

salt

curry

Dressing:

6 tablespoons olive oil

Juice of 1/2 lemon

1 tsp mustard

1 tsp honey

Salt and pepper to taste

Preparation:

  1. First peel the sweet potato, cut into small pieces and marinate together with the chickpeas in olive oil, salt and curry

  2. Now place the mixture in the oven at approx. 220 °C for 25-30 minutes

  3. Then peel the inside of the red cabbage with a peeler and chop the orange and spring onions into small pieces

  4. Now cut the halloumi into small pieces and fry in a pan with olive oil

  5. Combine the ingredients for the dressing and mix everything together in a large bowl

  6. Now arrange the salad and enjoy
