Ingredients (2 portions):
100g strawberries
1 ripe banana
100g flour
1 tsp baking powder
150ml oat milk
1 TBSP. Vegan protein drink - vanilla (optional)
1-2 tbsp agave syrup (or another sweetener of your choice)
Preparation:

Wash the strawberries, remove the green and cut into thin slices. Peel the banana and also cut into thin slices

Now mix the flour and baking powder in a bowl. Gradually add the oat milk and stir well until you have a smooth batter. If desired, add protein powder and mix well

Leave the dough to rest for a few minutes to allow the baking powder to take effect

Then lightly grease a frying pan and heat up

Now dip the fruit slices in the batter, place in the pan and fry over a medium heat until golden brown on both sides. Repeat the process until the batter and fruit are used up

Stack the finished mini pancakes on a plate and keep warm while you work with the remaining batter and fruit

Finally, drizzle with agave syrup or garnish with other toppings such as yogurt, nuts or coconut flakes as desired
