Vegan cinnamon bun

The small, low-calorie cinnamon buns made from spelt flour are quick to prepare and are not only delicious in the Christmas time irresistibly delicious. Ingredients (1 tray):

For the yeast dough:

650g spelt flour

2 pack of dry yeast

5-6 tbsp agave syrup

2 tbsp margarine  

200ml oat milk

1 pinch of salt 

For the filling:

2 tbsp margarine

2 tsp cinnamon

1 pack of dates

Some coarse sea salt

2 tbsp apple puree

For the topping: 

60g powdered sugar

1-2 tbsp lemon juice from a fresh lemon


  1. First mix all the dry ingredients for the yeast dough together
  2. Next, melt the butter in a microwave or in a bain-marie and mix with the other liquid ingredients
  3. Now gradually add the liquid ingredients to the flour and knead into a firm dough using a hand mixer and dough hook and place in a warm place to rise for an hour
  4. Next, place all the ingredients for the filling in a blender and blend until smooth
  5. Then roll out the dough to a thickness of approx. 1 cm and spread the filling on top
  6. Now cut off strips approx. 3-4 cm thick and roll them up, place on a baking tray and place in the oven for 15-20 minutes at 180 °C fan oven
  7. Finally, immediately pour the icing over the hot cinnamon buns and leave to cool slightly.
  8. Enjoy your meal!
