variety quick and easy variant Peach splits salad
Ingredients (2 portions):
3 peaches
1 cucumber
1 avocado
150g cherry tomatoes
100g arugula
50g pumpkin seeds
30g walnuts
200g vegan feta cheese
olive oil
For the vinaigrette:
3 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 tablespoon of lemon juice
1 tablespoon of agave syrup
1 TL mustard
Salt
pepper
Preparation:
- First cut the vegetables into bite -sized pieces
- Wash the rocket and let it drain well
- Then briefly roast the pumpkin seeds and the walnuts with a little olive oil and a dash of agave syrup in a pan
- For the vinaigrette olive oil, balsamic vinegar, lemon juice, agave syrup and mustard and season with salt and pepper
- Now wash the peaches, core and cut into columns
- Then fry the peach columns from both sides for about 3 minutes until they get a nice color
- Finally spread the salad on a large flat plate and garnish with the peaches, the vegan feta cheese and the nuts
- Finally, drizzle the vinaigrette over it and enjoy the salad - good appetite!
