Ingredients (1 cup):
2 tablespoons spelt flour
2 tbsp. oat milk (or other vegetable milk of choice)
1 tsp baking powder
Agave syrup (to taste, to achieve the desired sweetness)
Raspberries (fresh or frozen, depending on availability)
Put the spelt flour, oat milk, baking powder, agave syrup and protein powder in a microwaveable cup and mix everything together.
Now add the raspberries to the batter and gently fold in - Depending on personal preference, you can also keep some raspberries for decoration
Then place the cup in the microwave and bake on high power for about 1-2 min. The exact time may vary depending on the microwave, so it is advisable to watch the batter during the baking process. The cake is ready when it has risen and is firm to the touch
When the dough has risen and is firm to the touch, remove the protein cupcake from the microwave and garnish with additional raspberries as desired.
Allow the cupcake to cool slightly and then enjoy!
