Asparagus with parmesan

Asparagus with parmesan and tomatoes in the oven is an absolutely delicious dish. The freshness of the asparagus harmonizes perfectly with the sun-ripened tomatoes and the hearty taste of Parmesan cheese.

Ingredients (2 portions):

500g asparagus

250g tomatoes (preferably cherry tomatoes)

50g Parmesan cheese (freshly grated)

2 tbsp olive oil

salt to taste

Pepper to taste

2 cloves of garlic (finely chopped)

Preparation:

  1. Wash the asparagus and cut off the woody end

  2. Place the asparagus on a baking tray lined with baking paper, drizzle with olive oil and season with chopped garlic, salt and pepper

  3. Then halve or quarter the tomatoes and arrange over the asparagus

  4. Bake at 200°C for approx. 15 minutes until the asparagus is tender and the tomatoes are lightly browned

  5. Then sprinkle the grated Parmesan over the baked asparagus and tomatoes and bake for a further 5 mins.

  6. Remove from the oven and serve
