The eggplant is a versatile vegetable that can be used in many different dishes. In this recipe, an eggplant is cut into small pieces and mixed with tomato sauce, tomatoes, basil, cheese and spices to make delicious piccolinis baked. These are a perfect snack for in between meals or a tasty starter.

Ingredients (1 tray):
1 eggplant
tomato sauce
Spices (e.g. oregano, thyme, garlic powder)
1-2 tomatoes
Fresh basil
Cheese (e.g. mozzarella or parmesan)
Salt and pepper
Preparation:

Cut the eggplant into thin slices and place them on a baking tray lined with baking paper

Spoon a teaspoon of tomato sauce onto each slice of eggplant and spread evenly

Now cut the tomatoes into small pieces and spread them over the eggplant slices

You can then top the slices with basil and cheese (diced or grated) and season everything with salt, pepper and spices of your choice

Bake the eggplant piccolinis in the oven for about 15-20 minutes until the cheese is melted and golden brown

Remove the eggplant piccolinis from the oven and leave to cool for a few minutes before serving
