Ingredients (2 portions):

A handful of raspberries

100g lamb's lettuce

100g chicory

1 shallot

olive oil

3 tbsp vinegar

salt

pepper

Goat cheese

Fresh parsley

Lemon

Preparation:

  1. First wash and drain the lettuce

  2. Now fry the goat's cheese in a hot pan on both sides until golden brown

  3. Meanwhile, chop the chicory and shallot and place in a bowl with the lamb's lettuce and a few raspberries

  4. Then, for the marinade, mix together the remaining raspberries, olive oil, vinegar, salt, pepper and a little lemon juice and whisk well

  5. Pour the marinade over the salad and arrange on a plate

  6. Finally, add the fried goat's cheese to the salad, drizzle a little marinade over the cheese and enjoy!
