Ingredients (4 servings):

4 egg whites

1 egg yolk

150g skimmed milk yogurt

100g low-fat quark

50ml milk

75g applesauce

50g xylitol

175g flour

approx. 400g blueberries

2TL baking powder

pinch of salt


  1. First, mix together all the ingredients except the flour and stir well

  2. Then combine the flour and baking powder, add to the mixture and stir until smooth

  3. Now beat the egg whites until stiff and fold into the batter

  4. Then fry the pancakes in a Teflon pan, pour in some batter, sprinkle with blueberries and turn once

  5. Serve the pancakes on a plate and decorate with agave syrup, blueberries and some powdered sugar or other toppings of your choice

  6. Enjoy your meal!
