This tomato soup is not only super tasty, but also quickly in preparation. It is ideal as a light, warm meal on cool spring evenings or as a delicious starter. In addition, this gentle recipe is suitable for the Juice cure Preparation because it optimally prepares you for liquid food. Ingredients (4 portions):
1 kg round or meat tomatoes
1 red pepper
1 small chilli
2 cloves of garlic
2 onions
oil
5G fresh basil
3 tablespoons of tomato paste
Vegetable broth
Salt
pepper
Optional: vegetable cream
Preparation:
- Wash the tomatoes, the peppers and the chili pepper
- Then scabize everything into small pieces
- Peel the onions and the garlic and crush them too
- Heat some oil in a saucepan at medium temperature
- First sweat in it the garlic, the onions and the chilli pepper until the onions become glassy
- Then add the tomatoes, the peppers, the fresh basil and possibly oregano and lovage as well as the tomato paste
- Steam everything for about 5 - 10 minutes
- Cover everything with vegetable broth and let it simmer for 60 minutes
- Puree the ingredients into a creamy soup and taste with pepper and salt
- Serve warm and top with a vegetable cream as you like
