1 celery root (approx. 600g)

75g flour

160ml soy milk

2 tbsp mustard

5 tbsp chickpea flour

1 tsp salt

½ tsp kala-namak (optional)

1 pinch of turmeric

150g breadcrumbs

1 tsp paprika powder

Vegan butter

Preparation:

  1. Peel the celery root and cut it into slices about 1 to 1.5 cm thick

  2. Place the slices in a pan, cover with salted water and leave to pre-cook for 5 minutes

  3. Then pour off the water, drain the celeriac slices and leave to cool slightly

  4. In the meantime, put the flour in a deep plate

  5. In another deep dish, mix the soy milk with the mustard, chickpea flour, 1 teaspoon of salt, kala namak, pepper and turmeric

  6. In another plate, mix the breadcrumbs and paprika powder
