Smashed carrots

You've probably heard about the latest trend in the vegetarian cuisine trend: Smashed Carrots! This simple, but refined recipe is a delicious and creative way to prepare carrots. Feel free to experiment with different spices and ingredients and create your own version of smashed carrots. We're sure you'll be just as excited as we are!

Ingredients (1 tray):

Carrots

2 tbsp oil

Spices of your choice (e.g. paprika, salt, pepper, oregano)

Preparation:

    1. Place the carrots in a large saucepan and cover with water. Bring the pan to the boil and simmer on a medium heat for approx. 10-12 mins. until soft

    2. Drain the carrots in a sieve and leave to drain

    3. Place the carrots on the baking tray and mash with a fork or potato masher

    4. Add the oil and spices and mix well

    5. Bake in the oven for 30 minutes at 200°C until golden brown

    6. Serve and enjoy!
