Pumpkin and leek curry

Ingredients (2 portions):

400g pumpkin

1 leek stalk

1 tsp tomato puree

1 tsp olive oil

150ml vegetable stock

60g red lentils

100g skimmed milk yogurt

curry powder




  1. First chop the onion and garlic

  2. Now fry the onion and garlic for about three minutes until golden brown

  3. Then gradually add all the ingredients to the pan and cover with cream and vegetable stock

  4. Now bring everything to the boil and then simmer gently over a low heat for 12 to 15 minutes. Stir regularly

  5. Finally, serve on a plate and top with a little Parmesan cheese

  6. Enjoy!
