Baked enoki mushrooms with salad

This is a very unusual, somewhat exotic but also very special and delicious recipe. Baked enoki mushrooms on a bed of lettuce with a simple vinaigrette of olive oil and lemon juice. This Mushrooms are not only very aromatic, but also low in calories and healthy.

Ingredients (2 servings):

100g enoki mushrooms

Endive lettuce


Beet sprouts



Sea salt


paprika powder

Chili threads

Olive oil


  1. Remove the stalk from the mushrooms, quarter the mushrooms lengthwise and place them on a baking sheet covered with baking paper.

  2. Brush the mushrooms with olive oil, add salt, pepper and chili threads and put them in the oven for about 20-25 min.

  3. Next, drain the chickpeas, season with paprika, salt and pepper and place in the oven for about 15-20 min.

  4. Now wash and chop the lettuce and radishes

  5. Then put the lettuce in a bowl, add the beet sprouts and radishes and dress with a little olive oil, lemon juice, salt and pepper.

  6. Finally, serve the salad on a plate and garnish with the enoki mushrooms and chickpeas. Optionally add lemon juice on top

  7. Let taste
