Baked enoki mushrooms with salad

This is a very unusual, somewhat exotic but also very special and delicious recipe. Baked enoki mushrooms on a bed of lettuce with a simple vinaigrette of olive oil and lemon juice. This mushrooms are not only very aromatic, but also low in calories and healthy.

Ingredients (2 portions):

100g enoki mushrooms

endive salad

Chickpeas

Beet sprouts

Radish

Lemon

Sea salt

Pepper

paprika powder

Chili threads

olive oil

Preparation:

  1. Remove the stalk from the mushrooms, quarter the mushrooms lengthwise and place them on a baking tray covered with baking paper 

  2. Brush the mushrooms with olive oil, sprinkle with salt, pepper and chili threads and place in the oven for approx. 20-25 mins.

  3. Next, drain the chickpeas, season with paprika powder, salt and pepper and place in the oven for approx. 15-20 mins.

  4. Now wash and chop the lettuce and radishes

  5. Then place the salad in a bowl, add the beet sprouts and radishes and dress with a little olive oil, lemon juice, salt and pepper

  6. Finally, serve the salad on a plate and garnish with the enoki mushrooms and chickpeas. Optionally sprinkle with lemon juice

  7. Enjoy
