Vegan cheese fondue

Ingredients (4 portions):

200g potatoes

150g chickpeas

3 tbsp cashew butter

100ml white wine vinegar

240ml plant milk

3 tbsp yeast flakes

2½ tbsp potato starch

1 tsp salt

1 tsp onion powder

1 tsp olive oil

Side dishes of your choice

Preparation:

  1. First peel the potatoes and cut into 2-3 cm pieces.
  2. Now place the potatoes in a pan with the chickpeas, cover with water and simmer for 15 minutes.
  3. Meanwhile, cut the lid off the bread, scoop out the bread, cut the crumb (the inside) into small pieces, fry in a pan until crispy and set aside.
  4. Now put the cooked potatoes and chickpeas in a blender. Then add the remaining ingredients and blend on the highest setting until the consistency of the mixture is smooth.
  5. Now pour the mixture into a saucepan, turn the heat to medium and simmer for a few minutes until the fondue is stretchy and elastic.
  6. Finally, pour the fondue into the bread and serve with the fried bread cubes and vegetables, if desired.
