Vegan pasta with green asparagus and walnuts

Ingredients (2 portions):

400g pasta

500g green asparagus

1 organic lemon

70g walnuts

20g butter vegan

1 garlic clove

Vegan parmesan 

sea salt

  1. Cook the pasta according to the packet instructions 

  2. Meanwhile, wash the asparagus and lemon, cut the asparagus into mouth-sized pieces and add to the boiling pasta water for the last 5 minutes

  3. Now finely chop the walnuts

  4. Then place the asparagus in a hot pan with a little butter, add the garlic and deglaze with a little pasta water 

  5. Now add the Parmesan, walnuts and lemon zest, toss and add the pasta 

  6. Finally, arrange on a plate, garnish with lemon, walnuts and a little lemon zest and enjoy.
