Healthy vegan doughnuts

Ingredients (12 portions):

500g flour (250g spelt flour, 250g wheat flour)

15g fresh yeast

¼ tsp fresh vanilla

½ tsp salt

220ml plant-based milk

60ml agave syrup

60g soft vegetable margarine

To finish

50g liquid margarine for spreading

Powdered sugar or coconut flour for dusting

Jam or custard for filling 

Preparation:

  1. First put the flour, salt and fresh vanilla in the mixing bowl and mix together

  2. Now crumble in the yeast and add the plant-based margarine, plant-based milk and agave syrup

  3. Then knead the dough into an elastic dough using a food processor or a hand mixer with a dough hook for approx. 5-10 minutes, shape into a ball, cover and leave to rise in a warm place for 1.5 to 2 hours until the dough has doubled in size

  4. Now take out the dough, knead briefly and divide into 12 portions

  5. Preheat the oven to 180°C top and bottom heat

  6. Now shape the dough pieces into balls and place on a baking tray lined with baking paper, cover again and leave to rise for 30 minutes

  7. Finally, bake the doughnuts for approx. 25 minutes, leave to cool and fill with the filling of your choice and dust with powdered sugar or coconut flour

  8. Leave to taste
