Vegan vegetable paella
A little Spain in your own kitchen. No problem with this delicious paella recipe. With little effort you can prepare this vegan vegetable paella yourself and bring the national court of Valencia to your home. Ingredients (4 portions):
2-3 tablespoons of olive oil
1 onion
3 cloves of garlic
1 small bar leek
1 red pepper
1 green pepper
200g Paella rice
480ml vegetable broth*
2 tomatoes chopped
200g tofu
150g peas
1 glass artichoke hearts 165 g drip weight
10 Kalamata olives
Spices:
1 TL paprika powder*
1 1⁄2 tsp turmeric*
1 packet of saffron powder 0.1 g
2 tablespoons of Tamari sauce* or soy sauce
Salt and pepper to taste
Topping:
1 BUND PETERSILIE
1 organic lemon cut into slices or quarters
Sesame* optional
Preparation:
- First peel the onion and the garlic and cut both into small cubes
- Then heat 1-2 tablespoons of oil in a pan and roast the onions and the garlic in it
- Meanwhile, cut the leek into rings and the peppers into cubes. Then put both in the pan together with the rice and steam everything for 2-3 minutes
- Then add the saffron, 1 teaspoon of turmeric and paprika powder and then delete the vegetable broth
- Now add the remaining vegetable broth and the tomatoes, cover the pan with a lid and let the contents of the pan simmer for about 20 minutes until the rice absorbs the liquid
- Meanwhile, press the tofu dry, cut it into small cubes and fry it in oil until golden brown on both sides
- Now season with 1/2 TL turmeric and delete the Tamari sauce
- Mix the tofu, the peas, the artichoke hearts and the olives under the paella and let everything pull together for a few minutes
- Top then with lemon, parsley and with sesame
