Ingredients (4 portions):
200g broccoli
70g red lenses
300ml vegetable broth
80g coconut milk
1 onion
2 toes garlic
1 tablespoon of olive oil
2 tablespoons of yellow curry paste
1/2 red pepper
Salt pepper
10 cashew nuts
Preparation:
- Cut the onion and the garlic into fine pieces
- Separate the broccoli into individual florets and cut the peppers into cubes
- Put some oil in a pan and steam the onion and the garlic in it
- Add the curry paste and mix it with the onion and the garlic
- Delete with 300ml vegetable broth
- Now add the lenses and mix all the ingredients in the pan carefully
- Then stir the coconut milk with the ingredients in the pan
- Add the broccoli and the pepper and let everything boil together in the pan
- Serve the curry on a plate and topping with cashew nuts
