Ingredients (1 portion):

280g plain wholemeal spelt flour

3 eggs

60g honey

2 tsp baking powder

200ml low-fat milk

2 tsp cinnamon

2 tbsp cocoa powder

1 small zucchini

1 tsp gingerbread spice



  1. First preheat the oven to 170 °C

  2. Then mix all the ingredients except the zucchini in a bowl

  3. Wash the zucchinis, shred and fold into the batter

  4. Pour the batter into the silicone molds and bake for approx. 30-35 min.

  5. Once the gingerbread is ready, transfer to a wire rack and leave to cool

  6. Finally, decorate to your liking and enjoy
